Cinnamon Smoked Almonds

Ingredients

1/2 Cup Honey

3/4 Cup Brown Sugar

3 Tbsp Melted Butter

1 Tbsp Sea Salt

1 Tbsp Ground Cinnamon

8 Cups Unsalted Almonds


Optional:

1 tsp Cayenne Pepper

1 TBS Granulated Garlic

Directions

Microwave butter in a large bowl for 30 seconds to melt.

Add honey, brown sugar, salt and cinnamon to the bowl, and mix well

Add almonds and mix thoroughly, to completely cover the almonds

PlFrog Mats, but you can use aluminum foil or cookie sheets, sprayed with PAM

Spread nuts evenly over Frog Mats (You can also spray cookie sheets lightly with PAM)

Smoke at 100°-120° (Smoke Setting) for 2 hours

Increase to 250° for 45 min. to set the coating on the nuts

While still warm and slightly sticky, sprinkle Sea Salt over nuts.

Allow to cool, then break apart and place in sealed container.

Notes

These were not particularly great. Nothing wrong with them but not either particularly sweet or savory. Just mildly both.
